Delight your guests with these fresh and colorful veggie spring rolls, perfect for bridal showers and gatherings.
Ingredients

rice paper wrappers

vermicelli noodles (cooked)

carrots (julienned)

bell peppers (thinly sliced)

cucumber (julienned)

fresh cilantro or mint (chopped)

hoisin sauce

peanut butter (optional)
Sweet chili sauce (for serving)
Instructions
Soak rice paper in warm water until pliable, then lay flat.
Place noodles and vegetables on one side of the wrapper, then fold and roll tightly.
Repeat with remaining wrappers and fillings.
Mix hoisin sauce with peanut butter or serve with sweet chili sauce.
Arrange on a platter with dipping sauces for serving.
Notes
Keep the rolls moist by covering with a damp cloth until serving.
