Ingredients

Wrapper

  • 8 pieces rice paper wrappers
  • 1 cup vermicelli noodles (cooked)
  • 1 cup carrots (julienned)
  • 1 cup bell peppers (thinly sliced)
  • 1 cup cucumber (julienned)
  • ½ cup fresh cilantro or mint (chopped)
  • ¼ cup hoisin sauce
  • 2 tbsp peanut butter (optional)
  • Sweet chili sauce (for serving)

Instructions 

  • Soak rice paper in warm water until pliable, then lay flat.
  • Place noodles and vegetables on one side of the wrapper, then fold and roll tightly.
  • Repeat with remaining wrappers and fillings.
  • Mix hoisin sauce with peanut butter or serve with sweet chili sauce.
  • Arrange on a platter with dipping sauces for serving.

Notes

Keep the rolls moist by covering with a damp cloth until serving.
