Instructions
Cook 1 cup of blueberries with 1 tablespoon honey until they burst and form a compote; cool.
Mix Greek yogurt, remaining honey, vanilla, and lemon zest until smooth.
Line a baking sheet with parchment paper and spread the yogurt mixture evenly.
Dollop cooled blueberry compote and scatter remaining blueberries over the yogurt. Swirl gently.
Add optional toppings, freeze for 3-4 hours, then break into pieces to serve.
