A delicious and healthy frozen treat combining creamy Greek yogurt with sweet blueberries and optional toppings, perfect for a quick snack or dessert.

Ingredients

Dairy

  • 3 cups Plain Greek Yogurt (Full-fat or low-fat, Greek preferred for thickness)
  • 1.5 cups Fresh Blueberries (Frozen can be used)
  • 0.25 cup Honey or Maple Syrup (Adjust sweetness as desired)
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Lemon Zest (Optional)

Optional Toppings

  • to taste Chopped Nuts, Seeds, Coconut, Chocolate Chips (Optional for added texture)

Instructions 

  • Cook 1 cup of blueberries with 1 tablespoon honey until they burst and form a compote; cool.
  • Mix Greek yogurt, remaining honey, vanilla, and lemon zest until smooth.
  • Line a baking sheet with parchment paper and spread the yogurt mixture evenly.
  • Dollop cooled blueberry compote and scatter remaining blueberries over the yogurt. Swirl gently.
  • Add optional toppings, freeze for 3-4 hours, then break into pieces to serve.

Store in an airtight container for up to 2 months.
