Ingredients

Fruits and Juices

  • 1 lb blueberries (fresh or frozen)
  • 1 Tablespoon fresh lemon juice
  • 2 strips lemon peel
  • 0.25 cup maple syrup (or honey for non-vegan)

Dairy and Grains

  • 4 cups plain yogurt (dairy or non-dairy)
  • 1 cup granola of choice (nut-free or grain-free if desired)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss blueberries with lemon juice, lemon peel, and maple syrup; spread in a baking dish.
  • Roast for 15-18 minutes (fresh) or 20-23 minutes (frozen), stirring halfway.
  • Cool completely, remove lemon peel, and chill blueberries.
  • Layer yogurt and roasted blueberries in glasses, top with granola, and serve immediately.

Notes

Use frozen blueberries if fresh are unavailable; roasting enhances flavor.
