Delicious and wholesome blueberry oat squares perfect for a quick snack or dessert, combining a buttery crust with a sweet blueberry topping.

Ingredients

Crust and topping

  • 0.75 cup butter, softened to room temperature
  • 0.5 cup brown sugar
  • 1.5 cups rolled oats
  • 0.75 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • pinch salt
  • 2 cups blueberries, fresh or frozen
  • 3 tablespoons granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch
  • 3 tablespoons butter, melted
  • 0.75 cup rolled oats
  • 0.25 cup brown sugar
  • 1 teaspoon ground cinnamon

Instructions 

  • Preheat oven to 350°F (175°C).
  • Cream butter and brown sugar, then add oats, flour, vanilla, baking powder, and salt. Press into a 9-inch pan.
  • Mix blueberries with sugar, lemon juice, and cornstarch; spread over crust.
  • Combine melted butter, oats, brown sugar, and cinnamon; sprinkle over blueberries.
  • Bake for 30-35 minutes until golden. Cool and cut into 9 squares.

Notes

For best results, use fresh blueberries if possible.
