Delicious and wholesome blueberry oat pancakes perfect for a hearty breakfast or brunch.

Ingredients

Dry ingredients

  • 1 3/4 cups old fashioned oats
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt

Wet ingredients

  • 1 large egg
  • 2 tablespoons unsalted butter (melted)
  • 1 cup whole milk
  • 1 teaspoon vanilla extract

Add-ins

  • 1/2 cup fresh blueberries

Instructions 

  • Add oats to a blender and process until fine powder.
  • Mix dry ingredients in a bowl. Add egg, milk, melted butter, and vanilla; stir until combined.
  • Gently fold in blueberries. Rest batter while pan heats.
  • Cook about ⅓ cup batter on a heated skillet until bubbles form, then flip and cook until golden.
  • Repeat with remaining batter. Serve with toppings of choice.

Notes

For extra flavor, add a drizzle of honey or maple syrup.
