A delicious and wholesome baked oatmeal featuring fresh blueberries and warm spices, perfect for a nutritious breakfast or snack.

Ingredients

Dried ingredients

  • 2 ¾ cups old fashioned rolled oats
  • 1 ½ cups milk of choice
  • 1 medium ripe banana, mashed (about ½ cup)
  • 2 large eggs
  • ¼ cup avocado oil
  • ¼ cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon fine salt
  • ¼ cup sliced almonds + more for topping
  • 1 ½ cups fresh or frozen blueberries, do not thaw if frozen

Instructions 

  • Preheat oven to 375℉ and spray a 9×9 or 8×8-inch baking dish.
  • Mix oats, milk, banana, eggs, oil, maple syrup, vanilla, baking powder, cinnamon, nutmeg, and salt.
  • Fold in almonds and blueberries, then transfer to the dish.
  • Bake for 30-35 minutes, then let sit for 10 minutes before serving.

Notes

Serve warm or chilled with your favorite toppings.
