Ingredients

Protein

  • 4 pieces Boneless Skinless Chicken Breasts (Can be cut into strips, chunks or left whole)
  • 1.5 cups Fresh Mango, Diced
  • 4 cloves Garlic, Minced
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Honey
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Olive Oil
  • 0.5 teaspoon Red Pepper Flakes
  • to taste Salt/Pepper (For seasoning)
  • 1 tablespoon Cornstarch (Optional but makes a thicker glaze)
  • 2 tablespoons Water (If using the cornstarch)
  • 2 tablespoons Green Onions, Sliced (Optional)

Instructions 

  • Slice chicken into strips or keep whole; pat dry and season with salt and pepper.
  • Heat oil in a skillet over medium-high; cook chicken until blistered and golden, then remove.
  • In the same pan, sauté garlic until fragrant, then add mango and blister slightly.
  • Add soy, honey, vinegar, and cornstarch mixture; simmer until glossy and thickened.
  • Return chicken to pan, toss with glaze, cook 1-2 minutes, then garnish with red pepper flakes and green onions.

Notes

For extra flavor, marinate chicken briefly before cooking.
