A delicious and wholesome baked oatmeal packed with fresh berries and nuts, perfect for a nutritious breakfast.

Ingredients

Dried ingredients

  • 2 cups old fashioned rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt

Wet ingredients

  • 2 cups milk
  • 2 large eggs ((lightly beaten))
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 medium lemon ((zested))

Berries and nuts

  • 2 to 3 cups mixed berries ((strawberries, raspberries, blueberries, blackberries))
  • 1/2 cup chopped walnuts

Instructions 

  • Preheat oven to 350°F (175°C). Spray an 8x8-inch baking dish with nonstick cooking spray.
  • Mix oats, baking powder, and salt in a large bowl.
  • Stir in milk, eggs, maple syrup, vanilla, and lemon zest.
  • Add berries and nuts; mix well. Transfer to baking dish.
  • Bake for 40-45 minutes until set and lightly browned. Serve warm.

Notes

Use fresh berries for best flavor and texture.
