1poundboneless skinless chicken breasts(about 2 large breasts)

2mediumsweet potatoes(peeled and diced into ½-inch cubes)

2tablespoonsolive oil(divided use)
½teaspoonsalt
½teaspoonblack pepper
½teaspoonpaprika
½teaspoongarlic powder
¼cupBBQ sauce(plus more for drizzling if desired)
1avocadoavocado(diced)
½cupcanned corn(drained)
½cupblack beans(rinsed and drained)
¼cupdiced red onion
2tablespoonschopped fresh cilantro
¼cupshredded cheese(cheddar or Monterey Jack)
2tablespoonssliced green onions
Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tablespoon olive oil, salt, pepper, paprika, and garlic powder. Roast for 25-30 minutes until tender.
While sweet potatoes roast, season chicken breasts with salt, pepper, paprika, and garlic powder. Cook in a skillet with 1 tablespoon olive oil until cooked through, about 6-8 minutes per side.
Slice cooked chicken and toss with BBQ sauce. Assemble bowls with roasted sweet potatoes, BBQ chicken, corn, black beans, red onion, avocado, cheese, cilantro, and green onions.
Drizzle additional BBQ sauce if desired and serve.
