A quick and flavorful fried rice dish with a spicy mayo sauce, perfect for a satisfying meal.
Ingredients

cold cooked jasmine rice

boneless skinless chicken breast, diced

vegetable oil

frozen peas and diced carrots

mayonnaise

Thai sweet chili sauce

sriracha (more to taste)

Instructions
Heat 1 tablespoon of oil in a large skillet and cook the diced chicken until golden. Remove and set aside.
Scramble the eggs in the same pan until just set, then add to the chicken.
Add remaining oil and sauté peas and carrots until tender.
Add rice, break up clumps, and let crisp slightly.
Return chicken and eggs, then whisk together mayonnaise, chili sauce, sriracha, and soy sauce. Pour over rice and stir until heated through. Garnish with green onions and serve.
Notes
Use day-old rice for best texture and flavor.
