A creamy and flavorful avocado egg salad served on toasted sourdough, perfect for a quick and nutritious meal.

Ingredients

Main

  • 1 piece avocado (roughly mashed)
  • 4 pieces hard boiled eggs (peeled and diced)
  • 0.25 cup green bell pepper (minced)
  • 2 tablespoons greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 0.5 teaspoon sea salt
  • 4 slices sourdough bread
  • 1 teaspoon everything bagel seasoning (click link for the recipe)
  • 1 teaspoon lemon juice

Instructions 

  • Mash the avocado in a bowl.
  • Add diced eggs, minced bell pepper, Greek yogurt, olive oil, lemon juice, dill, parsley, and salt. Mix well.
  • Toast the sourdough slices until golden.
  • Spread the avocado egg mixture onto the toasted bread.
  • Sprinkle with everything bagel seasoning and a squeeze of lemon juice. Serve immediately.

Notes

For extra flavor, add a dash of hot sauce or chopped chives.
