A deliciously moist cake layered with fresh apples and topped with a crunchy crumble, perfect for any occasion.
Ingredients
Dough and Batter
250gramsbutter(at room temperature)
150gramsbrown sugar
2pieceseggs
2tablespoonsgolden syrup
2teaspoonsvanilla extract
120gramsmilk
225gramsself-raising flour
5piecesapples(peeled and thinly sliced)
125gramsplain flour
75gramsrolled oats
100gramssoftened butter
80gramsbrown sugar
Instructions
Preheat oven to 160°C. Grease and line a 23cm round cake tin.
Beat butter and brown sugar until light and fluffy. Add eggs, golden syrup, vanilla, and milk; mix until smooth.
Sift in self-raising flour and mix just until combined. Spread half into the prepared tin.
Layer half of the sliced apples over the batter, then spread remaining batter and top with remaining apples.
Mix plain flour, oats, butter, and sugar to make crumbs; sprinkle over the cake. Bake for 60 minutes, then cool in the tin for 30 minutes before transferring to a wire rack.
Notes
Ensure not to overmix the batter for a tender crumb.
