A deliciously moist cake layered with fresh apples and topped with a crunchy crumble, perfect for any occasion.

Ingredients

Dough and Batter

  • 250 grams butter (at room temperature)
  • 150 grams brown sugar
  • 2 pieces eggs
  • 2 tablespoons golden syrup
  • 2 teaspoons vanilla extract
  • 120 grams milk
  • 225 grams self-raising flour
  • 5 pieces apples (peeled and thinly sliced)
  • 125 grams plain flour
  • 75 grams rolled oats
  • 100 grams softened butter
  • 80 grams brown sugar

Instructions 

  • Preheat oven to 160°C. Grease and line a 23cm round cake tin.
  • Beat butter and brown sugar until light and fluffy. Add eggs, golden syrup, vanilla, and milk; mix until smooth.
  • Sift in self-raising flour and mix just until combined. Spread half into the prepared tin.
  • Layer half of the sliced apples over the batter, then spread remaining batter and top with remaining apples.
  • Mix plain flour, oats, butter, and sugar to make crumbs; sprinkle over the cake. Bake for 60 minutes, then cool in the tin for 30 minutes before transferring to a wire rack.

Notes

Ensure not to overmix the batter for a tender crumb.
