A vibrant and healthy Mediterranean-inspired chickpea bowl featuring fresh vegetables and a creamy homemade Tzatziki sauce.

Ingredients

Main ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 0.5 cup chopped red onion
  • 0.25 cup Kalamata olives, pitted and halved
  • 0.25 cup chopped fresh parsley

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 0.5 cup grated cucumber, squeezed
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill

Seasoning

  • Salt and pepper to taste

Instructions 

  • Prepare the Tzatziki sauce: Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill. Season with salt and pepper. Refrigerate until serving.
  • Divide cooked quinoa into two bowls.
  • Top with chickpeas, cucumber, cherry tomatoes, red onion, and olives.
  • Drizzle with Tzatziki sauce and garnish with parsley.

Notes

For extra flavor, add a squeeze of lemon or a drizzle of olive oil.
