0.25cupKalamata olives, pitted and halved
0.25cupchopped fresh parsley
Tzatziki Sauce
1cupplain Greek yogurt
0.5cupgrated cucumber, squeezed
1clovegarlic, minced
1tablespoonfresh lemon juice
1tablespoonchopped fresh dill
Seasoning
Salt and pepper to taste
Instructions
Prepare the Tzatziki sauce: Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill. Season with salt and pepper. Refrigerate until serving.
Divide cooked quinoa into two bowls.
Top with chickpeas, cucumber, cherry tomatoes, red onion, and olives.
Drizzle with Tzatziki sauce and garnish with parsley.
