Dried Fruits
1.5cupspitted Medjool dates(weight is 222g)
3/4cupunsweetened Dutch process cocoa powder(72g)
Chocolate Chips
2cupsdark chocolate chips(316g)
Instructions
Add dates to a food processor and blend until a smooth paste forms. Scrape sides as needed.
Mix in 1/2 cup of cocoa powder until combined into a soft dough.
Test the mixture; add more cocoa if too sticky, blending until workable.
Scoop 1 tbsp portions, roll into balls, and freeze for 15-30 minutes.
Melt dark chocolate chips in microwave or double boiler until smooth. Stir in coconut oil if needed.
Dip each frozen ball into melted chocolate, place on parchment, and let set. Store in fridge or freezer.
Notes
Ensure dates are soft for easier blending, or soak dry dates beforehand.
